Some of the ingredients are not found in Malaysia. So, I changed it a little based on what's available.
SERVES 2
CHICKEN
Ingredients:
- 1 skinless chicken breast (Pound till slightly flattened and season with salt & pepper)
- 2 slices of crispy bacon (Tips: Wrap bacon with paper towel & microwave it for 30 secs)
- 2 slices of Cheddar Cheese (My personal favourite: President Cheddar Cheese)
- 1/4 cup of Mozarella Chesse
- 1-2 tbsp BBQ Sauce (My personal favourite: MasterFoods Barbeque Sauce)
- 2 large tomatoes (Diced)
- 2 tsp of chopped chives/basil (Optional)
- 1 tsp of lemon juice
Directions:
- Mix tomatoes, chives/basil with lemon juice and refrigerate.
- Slightly cook chicken breast on pan for 2 minutes and transfer chicken onto oven tray.
- Top chicken breast with barbeque sauce, bacon, both cheddar and mozzarella cheese.
- Placed them in a preheated oven at 220° until cheese melt.
- Serve with the tomatoes.
MASHED POTATOES
(Note: My all time favourite recipe made by Better Homes and Gardens Australia which can be found here.)
Ingredients:
- 3-4 steamed peeled potatoes (Preferably white potatoes)
- 2 tbsp of unsalted butter/margarine
- 50ml of milk OR cream
- Salt and pepper to taste
Directions:
- Mashed steam potatoes with butter till smooth (NO clumps.. i repeat NO clumps)
- Pour milk or cream onto mashed potatoes and WHIPPED it to give a fluffiness mouthfeel. (The best trick ever I've learned from my Australian mate)
- Sprinkled salt and pepper if desired.
ADDITIONAL
Serve with boiled vegetable such as brocolli, cabbage, carrot, cauliflower, corn etc. Sprinkle with salt and melt with a slight butter if desired.
